Brazilian Corn Bread

 4 Eggs
 1 cup Corn Flour (polenta with or without grits)
 1 cup Sugar
  cup Parmesan (1/3 cup)
  cup Shredded Coconut (unsweetened)
 1 cup Milk
 1 cup Oil (sunflower, safflower, etc.)
 1 tbsp Baking Powder

Preheat oven to 350°F

Mix all ingredients in a blender. Blend for 60 seconds or until fully blended.

Pour batter into buttered baking dishes or cupcake tins. Bake for 30 mins or until golden brown.
