Preheat the oven to 400 degrees Fahrenheit.
Prep your Zucchini: Slice into medallions, approximately 1/4 inch thick.
Spread butter onto a glass baking dish. Lay out medallions of zucchini. Salt between layers. Keep layering until your baking dish is about three quarters full.
Beat your eggs, milk, and pepper until a bit frothy. Pour over zucchini. Cover the top of the zucchini with sliced cheese. Bake until firm (about 24 mins).
